You can use different types of melons. For today’s post we’ve used Cantaloupe melon, but in Spain you will see most of the people using Santa Claus melon (Piel de Sapo). Anyway the Ibérico Ham and melon combination is fresh, delicate, tasty, and more than easy to prepare. You’ve got to try it, but make sure that you use a very good Jamón Ibérico de Bellota (

You can prepare this appetizer in a hundred different ways and with different presentations. We started by slicing the Cantaloupe melon in order to have the round section with the hole in the middle. After that we cleaned the melon seeds from the center hole.

Once we have the round melon slices we cut them into bite size pieces. You don’t even need to peel the melon! Then put some of the best Jamón Ibérico de Bellota in the center and you’re ready to taste an incredible sweet and savor combination.

For the presentation you can use some small crackers, marcona toasted almonds, and maybe some mint leaves.

Pairs good with a fresh white wine from Napa Valley. We paired it with a beautiful Sauvignon Blanc from Bluxome Street Winery. Delicious!

Use fresh and crispy romaine lettuce hearts. Put some extra virgin Olive Oil in a pan, chop some garlic and sauté until golden brown (be careful not to burn it because it’ll taste bitter and unpleasant). Pour the garlic with it’s olive oil directly on top of the lettuce. Add a pinch of salt, but not too much because the Jamón Ibérico is already a little bit salty.

Put the raw pine nuts in a pan with olive oil and sauté also until golden brown. Then put some pine nuts over the lettuce and some in the serving plate.

Last but not least, cut some small pieces of Jamón Ibérico de Bellota ( and place them on top of the appetizer. This is the touch of distinction that will convert a nice appetizer into a unique delicacy.

MANGO: Look for ripe mangoes. At this time of the year you’ll find great Tommy Atkins in the market, and you’ll know they are ripe when they are yellow and red outside and tender when you gently squeeze them. If they are not still there, just leave them on your kitchen counter for a few days.

JAMÓN IBÉRICO DE BELLOTA: The highest grade of Jamón Ibérico is Pure Ibérico de Bellota “Acorn Fed”. You’ll find it at Make sure to put bite-sized slices to make it easier to eat.

GREEN SALAD: You can use any kind of green for the salad. We like Lamb’s lettuce, Arúgula, Baby Beet greens, Spoon Cabbage, and Oak leaf.

DRESSING: Extra Virgin Olive Oil, Modena Vinegar, and salt.

The SECRET for the best “Salmorejo” you’ll ever have (don’t tell anybody)

Salmorejo is a very simple and special tomato soup/cream from the South of Spain (Córdoba), that should be enjoyed dipping toasted bread and served with a good plate of sliced Jamón Ibérico de Bellota, as tradition dictates. This Salmorejo recipe is all you need. 

Put in the blender in this order:

  • 1 Raw Egg
  • 2 Cups of Extra Virgin Olive Oil
  • 5 Medium size ripe Tomatoes on-the-vine (peel and cut them in 4 pieces each)
  • 1 Garlic clove
  • 4 Thick Slices of Bread (only the crumb)
  • Season with Salt and Vinegar

Our secret (don’t tell anyone): The secret in this Salmorejo recipe is putting the ingredients in this exact order, so when you turn on the blender the first thing that happens is that at the bottom the egg and olive oil turn into mayonnaise and then the tomatoes, garlic and bread blend into that mayonnaise. All this happens magically! You just have to turn the blender on medium speed for 30 seconds, and then maximum speed for 2 minutes. Taste it and add more salt and vinegar as needed.

Plate it in a small bowl with some hard boiled egg and small chunks of Jamón Ibérico de Bellota on top. Serve with some Picos Camperos bread sticks to add a crunchy texture to it. Don’t forget to put a side plate of sliced Jamón Ibérico de Bellota from Iberico Club
