Acorn-fed is the highest quality, great fat marbling, silky and buttery texture, “nutty” hints, slightly sweet, perfectly balanced. Grass-fed is the 2nd highest quality, good fat marbling, slightly firmer texture, less “nutty” hints, great flavor and very well balanced.
Both have similar flavor and texture profile. Jamón is the rear leg, weigths around 16lb, yields around 50 plates and it’s slightly easier to carve. Paleta is the front leg weights around 10 lb, yields around 30 plates and it’s a bit more difficult to carve due to the bone structure.
