There are many types of ham (Country ham, Serrano ham, plain Ibérico ham...). Only the Pata Negra is officially recognized as the top grade and sealed with a black label by authorities.

Our own maestro jamonero handpicks every jamón at its peak. He does this by touching the different parts of the ham to determine the quality and degree to which it has been cured. He also looks over the ham to check the color to determine the proportion of fat, among other things. Finally, he inserts a "cala" or small beef bone, into different areas of the ham. The only sense we don't use is taste - that's reserved entirely for you enjoyment.

They're fed an excluisive diet of lush grasses and sweet acorns from the ancient holm oak trees in the Dehesa forests of Southern Spain. This gives them a greater percentage of unsaturated fat, and a cholesterol count that's lower than many types of lean meat, including chicken and turkey. All of our pigs are raised humanely (certified), without antibiotics, GMOs, hormones, or artificial enhancements.

This delicacy is cured for 4 years.

Following traditional methods, the curing facilities are in the middle of largest Dehesa forest in the world. Our "Maestro Jamonero", Ham Expert, controls the temperature and humidity by opening and closing dozens of windows and allowing the mountain air into the curing facilities. This process is slow and methodical and can take up of four years to complete. Our Maestro Jamonero oversees every step of the way, following an age-old tradition that ensures every ham we produce lives up to our standards. After all, we are making the best ham in the world.
